So last night I did not end up cooking pork chops - instead I prepared Filipino Chicken BBQ. Skinless chicken that is - thus the words "NOT SO" precedes Filipino. Who in the right Filipino mind would remove the skin? - It's an abomination - a violation of everything Pinoy eating is all about. :)
Here is my recipe for the Chicken BBQ and BBQ DIP ( sorry no measurements, as my Nanay taught me - you just need to "tantya" the amount of ingredients.)
Chicken BBQ
Chicken ( I used boneless, skinless chicken thigh meat)
Mama Sita BBQ Marinade ( Ok - I can make this from scratch - but I don't really have time and I must admit Mama Sita's makes better marinade than me)Marinate the chicken for at least 1 hour and then grill. When it is almost cooked, baste the bbq with a mixture of cooking oil, banana catsup and brown sugar)
BBQ Dip
about 1/2 cup of White Vinegar
Salt to taste
abt 1 -2 tbsps of Brown Sugar
Onions (chopped finely)
Siling Labuyo
